Movie Monday!



Happy movie monday everyone!! Of course I am here to talk to you about an educational food movie!! YAY!  So, today I decided to watch "Fat, Sick & nearly dead" It stars Joe Cross on his journey of overcoming his obesity and illness. He puts down his hamburger only to pick up a juice for 60 days straight! Yes, I said it he drank only juices for 60 days! As he did this he traveled across the united states looking to change people's minds on this crazy juicing experiment. But, I know you all have this question in your mind. Did he bet his obesity and illness? I guess you're going to have to watch the movie to find out! ;)

Quick vegan beet salad with caramelized onions


Ingredients:
-3 small beets or 1 large beet
-half of an onion
-half of a clove of garlic
-1T vegan butter (I used earth balance)
- salt and pepper

1. Preheat your oven to 425 degrees Fahrenheit

2. Wash your beets using water

3. Place beets on a baking dish

4. Place the beets in the oven and let them cook for and hour or until you can easily poke a fork into it

5. Let beets cool for 15 minutes

6. Cut the onion in half again and then cut into strips

7. Place the vegan butter into a small sauce pan and let melt, when done place in the onions and let them cook for 6 minutes stirring occasionally

8. Add in the garlic and cook for another 3 minutes

9. Using a grater, grate the beets into a small bowl

10. Add in the onions

11. Stir and add in salt and pepper

12. Serve hot or cold and Enjoy! :)

Vegan Gnocchi with mushroom sauce





Ingredients for gnocchi:
- 2 large potatoes
- 1/2 c flour
- 1 T flax seed mixed w/  3T warm water
- 1/2 t  salt

Sauce:
2 c almond milk
3-4 cloves garlic
6 mushrooms sliced
2 T coconut milk
1 T olive oil
1/4 c onion
1/4 c flour
salt and pepper

1. Put the potatoes in the oven hahaha no one has time to do that. So, just put the potatoes in the microwave for 4 minutes then flip it over and cook for 5 more minutes.

2. Cut the potato in half and scoop out the inside and mix in the flax seeds with water, 1/2 c flour, and salt. Mix with a hand mixer or put into a kitchen aid.

3. Form the dough into a ball

4. Put some flour on your counter and roll dough into a long log.

5. Cut the dough into squares with a sharp knife.

6. Bring a pot with water into a boil

7. Drop in the gnocchi in small batches until they float to the top then take a slotted spoon to drain the water out

Sauce:
1. Heat oil in sauce pan

2. Put in the onion and garlic, cook for 3 minutes

3. Add in all ingredients except coconut milk and mushrooms

4. Bring to a boil

5. Add in the mushrooms and coconut milk

6. Add in Gnocchi and serve

7. Enjoy!!

Movie Monday!!!



Yet again I am here to talk to you guys about a movie I have seen. Of course this movie was not about teenagers falling in love or a comedy. It simply is a movie about food and how it can cure us. The movie is called "The beautiful truth" It spotlights the Garrett Kroschel diet that has repeatedly cured cancer and other diseases in hundreds of patients. This documentary highlights why the government is trying to keep this diet under lock and key. Let me let you in on a secret this diet consists on a raw vegan diet with lots of juicing. Crazy? You bet it is, but in this documentary people speak out on how this method saved them from going 6 feet under. A very good movie to watch if you know of someone going through cancer or other diseases. (It is available to watch on netflix)

No time tuesday!!!



So, if you like me sometimes you really don't want to cook and being vegan makes it 10x harder. But luckily many products come to our help, just like this one. Annie Chun's noodle bowl in the flavor teriyaki is to die for. This product is gluten-free, vegan, 100% natural, contains no preservatives and no msg is added. What more can you ask for? Oh yeah and did I mention that you only have to microwave it for 90 seconds. Movie Monday!!



So every so often I pull out my phone and open up netflix. No.. not to watch a drama, comedy or anything in that nature. But, to simply watch a movie to educate me on food and where it comes from. Today, I decided to watch a documentary called "vegucated." This shows how three average people from New York are turned from carnivores into vegans for 6 weeks. Not only do they get to experience the vegan lifestyle but an up close, eye opening experience to seeing how meat factories really work under closed doors. Seeing this made life as a vegan a little more easier. I have watched some pretty harsh movies just like this one, and it does have parts that that are a little hard to look at. But, all in all I learned a lot and feel like every person not just vegans should watch this movie. Perfect for someone looking into being vegan!
